Particle size is the quiet variable behind almost every powder complaint. A wide spread of fines and lumps causes segregation, poor flow and unpredictable dosing. A properly tuned centrifugal spray drying machine controls size at the source, so the powder leaving the tower is already uniform.
A wide particle distribution means fines dust everywhere while coarse lumps lag in blends, so the final product is inconsistent from scoop to scoop.

Define your target mean size first. Instant drinks usually want 80-120 μm for fast wetting; fine chemical powders often sit nearer 40-60 μm.
Higher wheel speed gives finer particles; lower speed gives coarser ones. Choose a unit whose speed range brackets the size you need with margin on both sides.
Feed solids and viscosity move the size, so ask for a trial to confirm the exact wheel speed and solids for your recipe.
If your feed is very viscous, consider a pressure nozzle or a hybrid system rather than fighting the wheel.
